Ana Sussman’s Potato/Onion Frittata recipe

5 medium potatoes
1 onion
7 eggs
Salt/pepper
Garlic (optional)
Olive oil
Cut potatoes in small, thin slices. Put into a pan to fry with a lot of hot olive oil. Slice onion into small pieces and add to the potatoes. Add garlic now if desired. When the potatoes and onions are golden in color, remove them from the fry pan and drain the oil. Beat the eggs and add the potatoes and onions to the egg mix. Now add a little oil back into the fry pan to coat the bottom. Add half the egg/potato/onion mixture to the pan and fry for a few minutes until the edges are cooked. Flip to cook the other side. Add salt & pepper to taste. Repeat with remaining mix to make a second frittata. Ana says you must use a lot of oil and to not cut down on the oil to make it healthy. Enjoy.
